Something Smells A Little Fishy

When I walked out of the house it smelled fishy! It wasn't until I was on a run that I realized it was the harðfiskur drying in the sheds. If you butterfly the fish, you must take care to keep the fish spread open while is drying. To hang, cut a small slit through the flesh and skin of the tail end of the fillet, and thread a wooden dowel or a piece of string through it. The fish may be dipped briefly in brine before drying. Hang out to dry. To properly dry the fish, it should be done outside, in fairly cool and dry weather.

To properly dry the fish, it should be done outside, in fairly cool and dry weather. Spring and autumn are perfect seasons, whereas winter and summer will obviously spoil your fish. You want your fish to dry, not to rot or freeze.
